Deep Dark Flourless Fudge Brownies – Gluten Free

There is a specific look that comes over my daughter Anne’s face when she catches the scent of melting dark chocolate. It’s a mix of pure concentration and absolute joy. While some children might be satisfied with a simple candy bar, Anne has always been a bit of a chocolate connoisseur. I remember one rainy afternoon finding her sitting quietly at the kitchen island, eyes closed, savoring a single square of high-quality cocoa as if she were a judge at a world-class competition. It’s that deep, unwavering love for chocolate that inspired this recipe. These brownies aren’t just “good for being gluten-free”—they are the richest, fudgiest squares in our repertoire, designed specifically to satisfy Anne’s high standards.

These are not your average gluten-free brownies. They are intensely fudgy, deeply chocolatey, and completely satisfying. Using rich, melted butter and a full two cups of sugar, the result is a dense, almost flourless texture that is incredibly moist. Every bite melts in your mouth, delivering a complex and decadent flavor thanks to the unsweetened cocoa powder and semi-sweet chocolate chips. Finished with a precise sprinkle of flaky sea salt, these brownies are truly an elevated indulgence, proving that gluten-free baking can be just as, if not more, satisfying than traditional recipes. The crackly top crust and the gooey, rich center are sure to become your new gold standard.

Ingredients

INGREDIENTS

  • 1 cup (225g) Unsalted butter, melted
  • 2 cups Granulated sugar
  • 4 Large eggs, room temperature
  • 1 tbsp Vanilla extract ¾ cup
  • Unsweetened cocoa powder ½ cup
  • Gluten-free all-purpose flour blend
  • ¼ tsp Salt
  • 1 cup Semi-sweet chocolate chips (ensure GF certified)
  • Flaky sea salt for finishing

Instructions

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  3. In a large mixing bowl, whisk together the melted butter and sugar until smooth.
  4.  Add the eggs one at a time, whisking vigorously after each addition until the batter looks shiny.
  5. Stir in the vanilla. Sift in the cocoa powder, gluten-free flour, and salt.
  6. Use a spatula to gently fold the dry ingredients into the wet until no streaks of flour remain.
  7. Fold in the chocolate chips.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 30–35 minutes. A toothpick inserted into the center should come out with a few moist crumbs (if it’s clean, they may be overbaked!).
  10. Allow the brownies to cool completely in the pan—this is the hardest part, but essential for the perfect fudgy texture. Sprinkle with sea salt before slicing.

Notes

Crohn’s-Friendly Gluten-Free Flour Blend

Ingredients:

·         1 cup white rice flour

·         1/2 cup almond flour

·         1/2 cup potato starch

·         1/4 cup tapioca starch

·         Optional: 1/4 cup certified gluten-free oat flour (if tolerated)

Instructions:

1.      Combine all flours in a large bowl.

2.      Whisk thoroughly to ensure even distribution.

3.      Store in an airtight container in a cool, dry place.

4.      Use as a 1:1 substitute for all-purpose gluten-free flour in cakes, muffins, and quick breads.

5.      Substitution Note: If you don’t need the recipe to be gluten-free, you can substitute regular all-purpose (AP) flour in place of the gluten-free flour blend using a 1:1 ratio. The texture may be slightly fluffier and more structured due to the gluten, which provides elasticity and binding. However, for those with Crohn’s disease or gluten sensitivity, gluten-free flour is often easier to digest.

Finding a truly exceptional gluten-free brownie recipe is not an easy task. But when I set out to make a dessert that would live up to my daughter Anne’s discerning standards, I knew I couldn’t compromise on texture or flavor. The result is this recipe, which has quickly become a family favorite. I hope these rich, decadent squares bring as much joy and indulgence to your table as they do to ours. They are a testament to the fact that with the right approach and quality ingredients, going gluten-free doesn’t mean giving up on the sweets we love.

Also Bruce with his Crohn’s Disease tolerates these very well when he is in remission.
