For years, many of us in the gluten-free community believed a truly flaky, buttery pie crust was an impossible dream. We’ve all been there: the “crust” that turns into a pile of sand the moment a fork touches it, or the dough that refuses to roll out without shattering into a million pieces.

But I have some news that might just change your holiday baking forever: I finally cracked the code.

The secret isn’t just in the flour—it’s in the science of temperature and the “parchment paper sandwich” technique. By keeping your fats frozen and your hands off the dough as much as possible, you can achieve those gorgeous, laminated layers that make a pie truly legendary.

A Note from the Kitchen: The “Bruce” Factor

There is something about the smell of cinnamon and roasting apples that always seems to lure my husband, Bruce, out of the garden and straight into the kitchen. He could be halfway through pruning the Meyer lemon tree, but the second that first whiff of nutmeg hits the air, he’s suddenly standing at the counter with a hopeful look on his face.

For years, I had to run a bit of a “defense play.” Bruce is a firm believer that apple pie is best enjoyed roughly thirty seconds after it leaves the oven, while I constantly had to remind him that the starches need time to set. One autumn afternoon, I found him with a single fork “sampling” a corner of a cooling pie to “ensure the flakiness was up to standard.” My solution was to bake a few extra hand pies just for him—a peace offering to keep the main event safe until dinner!  I do miss that man!

This is a full, two-crust pie featuring a beautifully handcrafted, golden-brown lattice top, which allows a glimpse of the rich, spiced apple filling bubbling beneath. The chunky filling appears to be a hearty blend of tart and sweet apples, promising a perfect texture in every slice.

Ingredients

The Flaky Gluten-Free Crust

  • 2 ½ cups Gluten-free all-purpose flour blend (with xanthan gum)

  • 1 tsp Salt & 1 tbsp Sugar

  • 1 cup (2 sticks) Unsalted butter, cubed and frozen

  • ½ cup Ice water + 1 tsp Apple cider vinegar

The Spiced Apple Filling

  • 6-7 cups Tart apples (like Granny Smith), sliced

  • ¾ cup Sugar & 2 tbsp GF flour

  • 1 tsp Cinnamon & ¼ tsp Nutmeg

  • 1 tbsp Lemon juice

Instructions

Instructions:

  1. Pulse: Combine dry ingredients and frozen butter in a food processor until pea-sized crumbs form.

  2. Bind: Drizzle in the ice water/vinegar mixture until the dough clumps. Divide into two discs and chill for 1 hour.

  3. Roll: Roll the dough between two sheets of parchment paper to prevent sticking and breaking.

  4. Assemble: Fill the bottom crust with your spiced apple mixture, top with the second crust, and cut steam slits.

  5. Bake: Bake at 218°C (425°F) for 15 minutes, then reduce to 190°C (375°F) for 45 minutes. Cool for 3 hours before slicing.

Notes

Flour Recommendations (If you can’t find GF AP)

If you can’t find a pre-mixed blend, you can DIY it:

  • The Blend: 2 parts White Rice Flour, ⅔ part Tapioca Starch, ⅓ part Potato Starch.

  • Crucial Step: Add ½ tsp xanthan gum per cup of flour!

  • Alternatives: Certified Gluten-Free Oat Flour is excellent for a nuttier flavor, or use Almond Flour for a press-in shortbread-style crust.

Also I like to do a galette style pie, I have troubles sometimes getting the top dough to look right.

As I mentioned before, my husband had Crohn’s disease.  He obviously could tolerate this pie well while he was in remission as long as I was sure to peel the apples.  When he was not in remission it was too much fat and too much fiber and he didn’t do well at all.

Whether you’re baking for a crowd or just trying to keep the “test bites” at bay from someone like Bruce, this gluten-free apple pie is proof that you don’t have to sacrifice texture for dietary needs. It’s more than just a recipe; it’s about that golden, flaky moment when everyone—gluten-free or not—reaches for a second slice.
