  • 1 cup (225g) Unsalted butter, melted
  • 2 cups Granulated sugar
  • 4 Large eggs, room temperature
  • 1 tbsp Vanilla extract ¾ cup
  • Unsweetened cocoa powder ½ cup
  • Gluten-free all-purpose flour blend
  • ¼ tsp Salt
  • 1 cup Semi-sweet chocolate chips (ensure GF certified)
  • Flaky sea salt for finishing

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides.
  3. In a large mixing bowl, whisk together the melted butter and sugar until smooth.
  4.  Add the eggs one at a time, whisking vigorously after each addition until the batter looks shiny.
  5. Stir in the vanilla. Sift in the cocoa powder, gluten-free flour, and salt.
  6. Use a spatula to gently fold the dry ingredients into the wet until no streaks of flour remain.
  7. Fold in the chocolate chips.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 30–35 minutes. A toothpick inserted into the center should come out with a few moist crumbs (if it’s clean, they may be overbaked!).
  10. Allow the brownies to cool completely in the pan—this is the hardest part, but essential for the perfect fudgy texture. Sprinkle with sea salt before slicing.

Crohn’s-Friendly Gluten-Free Flour Blend

Ingredients:

·         1 cup white rice flour

·         1/2 cup almond flour

·         1/2 cup potato starch

·         1/4 cup tapioca starch

·         Optional: 1/4 cup certified gluten-free oat flour (if tolerated)

Instructions:

1.      Combine all flours in a large bowl.

2.      Whisk thoroughly to ensure even distribution.

3.      Store in an airtight container in a cool, dry place.

4.      Use as a 1:1 substitute for all-purpose gluten-free flour in cakes, muffins, and quick breads.

 

5.      Substitution Note: If you don’t need the recipe to be gluten-free, you can substitute regular all-purpose (AP) flour in place of the gluten-free flour blend using a 1:1 ratio. The texture may be slightly fluffier and more structured due to the gluten, which provides elasticity and binding. However, for those with Crohn’s disease or gluten sensitivity, gluten-free flour is often easier to digest.
