Grasshopper Ice Cream Pie

Tomorrow is PI Day! Wednesday is St. Patrick’s Day! To celebrate both is the super easy delicious pie.

I have some friends that celebrate PI Day every year. We missed it last year and will miss it this year too except for virtually. But we are a little nerdy, enjoy a good pun, and of course love desserts! It’s the perfect day!!!

Description
This minty ice cream pie is so Yummy! Chocolate, mint and ice cream! Who could resist!
Ingredients
For the Crust:
1 1/2 Cups Chocolate Wafer Cookie Crumbs – between 30-35 wafers
5 Tablespoons of Butter, melted and let cooled a little
3 Tablespoons of Sugar
For the Pie Filling:
1 Quart of Vanilla Ice Cream softened
2 teaspoons Creme de Menthe – green or white
Green and Blue food coloring
Instructions
For the Crust:
Preheat the oven to 350.
In a food processor pulse the chocolate wafer cookies until they turn into crumbs.
Add the butter and the sugar and pulse 2-3 times until well blended
Pat the chocolate mixture into the bottom and sides of a 9 inch pie pan.
Bake until the crust is firm 5-7 minutes
Let cool completely
For the Pie Filling:
Mix softened Ice Cream, Creme de Menthe and food coloring until you get the desired color.
Spoon into cooled pie crust. Freeze 3-5 hours or overnight.

Notes
You can of course use a store bought chocolate cookie crust.
You can substitute 1 teaspoon peppermint extract for the Creme de Menthe.
If you are feeling particularly wild, you can chop up some Andes Chocolate mint candies and combine them in the Ice Cream Mixture
