  2. Build a Stiff Meringue: In a completely clean glass or metal bowl, begin whisking your room-temperature egg whites. Once they become foamy, gradually add the granulate sugar one tablespoon at a time. Continue beating on medium-high speed until you achieve glossy, ultra-stiff peaks.

  3. Paint it Red: Add your red gel or powder coloring directly into the stiff meringue and whip for another 10 seconds until the color is vibrant and fully incorporated. Tip: Make it a shade darker than your target color, as it fades slightly when baked.
