An easy moist banana bread with pineapple!
3 Cups Flour
2 Cups Sugar
1 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Ground Cinnamon
3/4 Cup Chopped Pecans
3 Eggs, beaten
1 1/4 Cups Vegetable Oil
2 teaspoons Vanilla
1 Can 8 ounces, Crushed Pineapple
4-5 Mashed Ripe Bananas
Preheat oven to 350.
Spray two 8×4 inch loaf pans well with Vegetable oil spray.
Using a potato masher or a large spoons, mash the bananas in a large bowl.
Combine the flour, salt, baking soda, and cinnamon with the bananas.
Add the beaten eggs, vegetable oil, vanilla, pecans and pineapple.
Mix until everything is just moistened.
Divide the batter into the two loaf pans.
Bake for 60-65 minutes until a toothpick comes out clean.
Make sure that the bananas are really ripe.
The nuts can easily be omitted.
