This is a delicious easy cookie to make that looks like you spent hours in the kitchen. It’s so easy your kiddos can help!
Ingredients
1 box of Red Velvet Cake Mix (or use any flavor that you want)
1/2 Cup Vegetable Oil
2 Large Eggs
Granulated Sugar for Rolling
Powdered Sugar for Rolling
Instructions
Preheat oven to 350.
Grease cookie sheet or use parchment paper or a silpat.
Combine the Cake Mix, Oil and Eggs until well combined.
The dough is pretty soft and sticky at this stage so chill for an hour.
Using a medium scoop scoop a ball, roll it in the Granulated Sugar first and then roll it in the powdered sugar. Really roll it in the powdered sugar until you have a white ball!
Place on the cookie sheet about 2 inches apart as they will spread and crinkle!
Bake for 8 – 11 minutes, depending on your oven, until they are set.
Let them cool a few minutes before you transfer them to a mat. They are very soft when they are hot!
Notes
The granulated sugar helps the powdered sugar to stick. Since the Red Velvet is a darker brighter color than the lemon it makes a more dramatic cookie!
