Description
A spicy yeast roll with raisins and orange icing! So good!
Ingredients
For the rolls:
2 packages (1/4 ounce) dry active yeast
2 cups warm milk (110 – 120 degrees)
2 eggs room temperature
3 Tablespoons butter – softened
1/4 Cup Sugar
1 1/2 teaspoons salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
6-7 cups of Flour
1 Cup Raisins
1 egg yolk
2 Tablespoons water
For the Icing:
1 Cup Powdered Sugar
3 Tablespoons Orange Juice – I use it out of the carton but you can squeeze it fresh if you want.
Instructions
For the rolls:
Dissolve the yeast in the milk in a small bowl or measuring cup.
Combine eggs, butter, sugar salt, spices and yeast mixture in large bowl.
Add in 3 cups of Flour.
Add in raisins.
Add in enough flour to make a soft sticky dough.
Knead the dough on a floured surface for 6-8 minutes. Nice way to get out aggression!
Grease a medium bowl with vegetable oil, put the dough in the bowl and turn it over to cover it with the oil.
Cover with a clean tea towel and let rise until doubled, usually about an hour. I have found putting the bowl in the microwave (turned off) keeps it out of the way and is a great environment for it to rise.
Punch it down, so it deflates, and go back to your floured surface.
Divide the dough into 24 balls, and place them 2 inches apart on baking sheets.
Cover again and let rise until doubled again, this time it’s only 30-45 minutes.
Preheat the oven to 375.
After the rolls have risen, use a sharp, sharp knife and cut a cross across the top, you can skip this part if you want.
Mix the egg yolk with the water and brush across tops to give it a shine brown finish.
Bake for 15-20 minutes. Let sit a few minutes and move from baking sheets to cooling racks.
For the icing:
Mix the powdered sugar and the orange juice and ice the tops of the rolls.
