
Chocolate Peppermint Bundt Cake! My grandmother made this cake every holiday season. It is so delicious! A rich chocolate cake with a hint of mint, chocolate ganache and crushed candy canes! So Yummy!
Ingredients
6 ounces semisweet chocolate chips
2 ounces baking chocolate, unsweetened
1/2 Cup Water
2 Sticks Butter, softened
2 Cups Sugar
4 Whole Egg yolks
1 teaspoon Vanilla
1 Teaspoon Peppermint extract
2 1/2 Cups Flour, sifted
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Cup Buttermilk
4 Whole Egg whites
Instructions
Preheat oven to 350
Melt all Chocolate in 1/2 C boiling water
Cream butter with the sugar
Add egg yolks and mix
Add vanilla and peppermint extracts
Add Flour, baking soda, salt and buttermilk, mix well
Add chocolate mixture and mix well
Beat egg whites until stiff but not dry
Fold into batter
Pour into well greased bundt pan
Bake at 350 for 1 hour
Glaze with Ganache, 1 Cup Chocolate Chips, 1 Cup Heavy Cream, Bring Cream to a boil stirring continuously, as soon as comes to a boil remove from heat and pour over chocolate chips in a mixing bowl. Whisk together until you have a shiny velvety ganache. Let cool about 15 minutes and glaze cake.
Sprinkle with broken up candy canes.
