A super easy rich decadent fudge with cherries!
1 12 ounce bag semi-sweet chocolate chips
1 14 ounce can sweetened condensed milk (Eagle Brand)
1/2 teaspoon Vanilla extract
1/4 teaspoon Almond Extract
1 5 ounce bag of dried TART cherries
In a microwave proof mixing bowl pour in the chocolate chips.
Pour the sweetened condensed milk on top.
Microwave for 1 minute.
Let sit a minute for the chocolate chips to melt.
Using a silicone spatula mix together until chips are all melted and it is smooth.
If all the chips aren’t melted microwave again for another 30 second.
Add the Vanilla and the Almond Extract.
Mix in the Cherries.
Pour into an 8 inch square cake pan that has been buttered. I spray it with cooking spray and then line it with parchment paper so it comes out cleaner. The cooking spray sort of mostly holds the parchment paper in place.
Let set, I put it in the refrigerator for about an hour.
This doesn’t need to be refrigerated so store in an air tight container.
Be sure to use Eagle Brand sweetened condensed milk. Evaporated milk will not set.
You can use other dried fruits, I’ve done apricots with the semi-sweet chocolate and mango with white chocolate.
