Coconut Candy Bar Cookies are another of my mother’s creations! She thought that Coconut Macaroons were kind of blah… So she decided to spice them up, and what better to make something more delicious than chocolate!

These Macaroons have finely chopped Mounds bars in them and then they’re dipped and drizzled in melted chocolate chips. These are so delicious that you won’t believe how good they are!

Ingredients

1 Cup Flour

1 teaspoon Baking Powder

1/4 teaspoon salt

2/3 Cup Sugar

1 3 ounce package Cream Cheese – softened

1/4 Cup – 4 Tablespoons Butter – softened

1 Egg

1 teaspoon vanilla

3/4 teaspoon almond extract

1/2 teaspoon grated orange peel

3 3/4 Cups Coconut – about a 12 ounce bag

7  1/2 ounces Mounds Bars finely chopped – 5 packages of the 2 bars @ 1.75 ounces or 10 pieces

6 ounces semi-sweet chocolate chips

Instructions

Preheat oven to 275

Combine Flour, Baking Powder and salt in medium bowl.

Beat Butter, Cream Cheese and sugar in a large bowl until fluffy

Beat in the egg, vanilla, almond extract, and orange zest.

Combine the butter mixture with the flour mixture.

Add 2 1/2 Cups Coconut and the finely chopped Mounds Bars.

Roll dough into 1 1/2 inch balls, roll in remaining coconut.

Place 2 inches apart on a parchment paper lined cookie sheet and flatten the balls slightly

Bake at 275 for 35 minutes.

Let the cookies cool for 10-15 minutes

Melt chocolate chips – I use the microwave

Put about 3/4 of the melted chocolate in a shallow bowl and dip the cookies into the chocolate about 1/3 of the way up.

Using a fork drizzle the remaining chocolate on top of the cookies.

Enjoy!

A delicious rich chocolate cake with chocolate icing that feeds a crowd!  It’s made in an 18×13 Jelly Roll pan

Ingredients

For the cake:

1 Cup Water

1 Cup Butter – 2 sticks

4 Tablespoons Cocoa Powder

2 Cups Flour

2 Cups Sugar

1 teaspoon Baking Soda

1/2 teaspoon Salt

1/2 Cup Sour Cream

2 Eggs

1 teaspoon Vanilla

For the icing:

1 stick plus 6 Tablespoons butter

4 Tablespoons Cocoa

6 Tablespoons milk

1 teaspoon Vanilla Extract

3 3/4 Cups Powdered Sugar

Instructions

For the cake:

Preheat oven to 350.

Spray a 13×18 jelly roll pan well with cooking spray.

In a medium sauce pan put the water, butter and cocoa powder and bring to a boil.

In a large bowl put the flour, sugar, baking soda  and salt, mix well.

In a small bowl or a large measuring cup, I use a 4 cup measuring cup, combine the sour cream, eggs and vanilla.

Add the sour cream mixture to the flour and mix well. 

Once the chocolate/butter mixture comes to a boil, pour it into the flour mixture and mix well until there are no lumps.

Pour it into the pan and smooth with a rubber spatula distributing the batter evenly.  

Bake at 350 for 15-20 minutes.  I have a convection oven so mine is done in 15.

For the Icing:

While the cake is baking make the icing.

Melt the butter with the cocoa powder in a medium sauce pan.

When butter is melted and cocoa powder is combined turn off the heat.

Add the milk, vanilla, and powdered sugar.

Stir together until well mixed.

Pour over the warm cake.

Let cool for the icing to set and cut into squares.

Notes

You can bake this in a 13×9 pan which makes a thicker cake with thicker icing.  You will need to bake it for 20-30 minutes

Some people insist that this sheet cake have pecans in the icing.  If you are a pecan lover, I am, but Sue isn’t!  You can add 1/2 cup of chopped pecans to the icing after the powdered sugar is mixed in.

Coconut Squares are my mother-in-law’s favorite cookie or cake… It is a light cake square covered in a delicious chocolate topping and rolled in coconut. Yummy! Chocolate and coconut.

She used to buy these from a bakery in Cleveland as a young woman and mother. When she moved to Florida she though that she would never have them again. Luckily she had family living there who would send them occasionally. We worked on the recipe until we got it just right!

I hope that you enjoy these as much as Annette does!

A light fluffy cake, covered in a rich chocolate topping, and rolled in coconut!

Ingredients

For the Cake Squares:

1 Cup Butter – softened

2 Cups Sugar

4 Cups Flour sifted

4 1/2 teaspoons Baking Soda

 1/2 teaspoon salt

1 1/2 teaspoons Vanilla

1 1/2 Cups Milk

8 egg whites

1/2 Cup Sugar

For the Chocolate Topping:

1 1/2 Cups Cocoa

4 1/2 Cups Sugar

4 1/2 Cups Water

Pinch Salt

3 teaspoons Vanilla

Sweetened coconut flakes chopped finely

Instructions

For the Cake Squares:

Preheat oven to 350

Cream together butter and sugar.

Add vanilla and beat until smooth.

Combine Flour, Baking Powder and Salt.

Alternate Flour mixture with milk mixing until smooth.

In a separate bowl, beat egg whites with 1/2 cup sugar until stiff peaks form.

Using a rubber spatula, fold the egg whites into the batter.

Put into 2  9×13 pans and bake for 35 minutes.

For the chocolate topping:

Combine cocoa, sugar, water and salt in a medium saucepan.

Boil for 5 minutes.

Cool and add 3 teaspoons of vanilla.

Construction:

Let cake cool and cut into squares.

Let topping cool and dip squares into the chocolate.

Let drain a few minutes and roll in finely grated coconut.

One year at Christmas, Nana Gaunt said she was making something new for dinner! She had a great recipe for Strawberry Salad. Our holiday dinners are normally at my sister’s house and everyone brings something, appetizers, salads, sides, desserts and my sister makes the meat and some of the sides with help from out of town guests (my daughter and me). Nana made the Strawberry Pretzel Salad Recipe and to say it was a HUGE hit would be an understatement!

We have this now probably twenty years later at every holiday. Christmas, Easter, the 4th of July, Thanksgiving, you name the holiday, Strawberry Pretzel salad is on the table! I call it a salad because Nana did, but it could easily be a dessert as well!

This is so delicious! A salty crunchy crust, a cream cheese almost cheese cake layer and then the strawberries and jello. The strawberries are where my sister and I disagree, she likes to use frozen strawberries and like fresh, other than that our salads are identical.

Nana’s Strawberry Pretzel Salad

A delicious salad/dessert with a pretzel crust, a cream cheese layer and strawberries!

Ingredients

3 Cups pretzels – stick or mini-pretzels work best

1 stick – 8 Tablespoons Butter – melted

2 Tablespoons sugar

1 –  8 ounce package cream cheese – softened

1 Cup Sugar

1 – 8 ounce tub frozen whipped topping – some call it the whip that is cool

16 ounce container strawberries or 1 bag frozen strawberries – sliced

1 – 6 ounce package of instant strawberry jello

Instructions

Preheat oven to 350

Crush the pretzels, I have a big marble rolling pin I use, my sister uses a food processor, I have to say we have even put them in gallon food storage bags and had the kids stomp on them (we won’t do that again)

Combine the crushed pretzels with the melted butter and press into a 9 x 13 pan.

Sprinkle the 2 Tablespoons of sugar over the top

Bake for 8 – 10 minutes

Let cool completely!  This is really important! I stick it in the refrigerator, my sister the freezer

While the crust is cooling, using a hand mixer beat the cream cheese in a medium bowl until fluffy.

Fold in the whipped topping, a rubber spatula works best

I put this in the refrigerator while I make the strawberry layer

Bring 1 1/2 cups of water to a boil

Mix the box of jello with the boiling water until all dissolved.

Add 1 cup of ice and stir continuously until the it begins to gel

Add the sliced strawberries

Chill for an hour until it is soft set

Get the chilled crust

Spread the cream cheese mixture onto the pretzel crust

Top the cream cheese with the strawberry mixture

Refrigerate until ready to serve

Peeps-shi! What could be more fun for Easter than Sushi made from Peeps, Rice Krispie Treats, Fruit by the Foot, and canned frosting. This is another of my daughter Joyce’s brainstorms.

This is so creative! She just used the pink bunnies, but they also come in yellow and blue and there are also the baby chickens in yellow, blue and pink. Fruit by the foot comes in lots of colors too! You can also experiment with tinting the rice krispie treats, I’ve done this at Christmas making red and green ones. I have to say the green ones looked like they had molded!

You can tint the frosting too! She used canned Cream Cheese frosting, but you can make your own from the recipe here!

Go wild, have the kids help! I’ll bet none of your friends and family will have Peeps-shi!

Sushi made from Peeps, Fruit by the Foot, Rice Krispie Treats and canned frosting.

Ingredients

For the Rice Krispie Treats:

3 Tablespoons Butter

1 Package (about 40) Marshmallows

6 Cups Rice Krispie Cereal

For the Peeps -shi

Several packages of Peeps in your choice of color and animal

Fruit by the Foot in a coordinating color

Canned Frosting in a white color

Instructions

For the Rice Krispie Treats:

Melt the butter in a large sauce pan over low heat.

Add Marshmallows stirring constantly until melted and combined.  If you wan to color the Rice Krispie treats add the food coloring at this point.

Add the Rice Krispies stirring until it is all coated.

Press into a large sheet pan so that the treats are about half an inch thick.

For the Sushi:

While the treats are still a little warm and flexible cut them into strips of 1 inch by two inches.

For the peepless ones cut a Fruit by the Foot the same length, put it on top of the treat and just roll it up.  It should stick together by itself.

For the ones with peeps, put a peep in one end and roll it up with the peep in the middle.   Cut a strip of Fruit by the Foot long enough to wrap around it.  Frost the outside of the treat and wrap the Fruit by the Foot around it.

For the nigiri type:

Cut the treats into strips about an inch by an inch and a half.  DO NOT CUT all the treats like this unless you only want nigiri style.

Spread a dollop of frosting on the treat and stick the peep in the frosting.  

Cut enough Fruit by the Foot to go around the treat/peep and attach with frosting on the back.

For the second type just put a little dab of frosting on top of the treat.

For the Sashimi type:

Just place some peeps on the tray!

Family Holidays are THE BEST! We really like to celebrate. My daughter Joyce especially likes to make her desserts especially festive and so she colors the pudding and whipped topping in this Peanut Butter Brownie Trifle to make it special for Easter!

This is a really easy dessert to make. Brownies, pudding, peanut butter, frozen whipped topping and miniature peanut butter cups. So good!!!!

You can use your favorite brownie recipe, a mix or you can make the black bean brownies for a gluten free option.

Some grocery stores carry a peanut butter instant pudding, but I can rarely find it so I add the peanut butter to vanilla pudding, it may actually be better than the premade instant!

You don’t have to color the pudding and the whipped topping but it does make a festive dessert for Easter!

A delicious trifle with brownies, peanut butter pudding, whipped topping and miniature peanut butter cups!

Ingredients

2 packages instant vanilla pudding – 3.4 ounce

3 1/2 Cups Milk

1/2 Cup Creamy Peanut Butter

1 tub Frozen Whipped Topping – 16 ounce thawed

1 Dozen Brownies – broken into bite size pieces

15-20 miniature peanut butter cups (optional)

Instructions

Rough chop the peanut butter cups and put aside.

In a medium bowl put vanilla pudding and 1 Cup Milk.  Mix until smooth.

Add the Peanut butter and mix until smooth.

Add the remaining milk mixing until well combined color it with food coloring here if desired, and refrigerate until set 5-10 minutes. 

If you want to color the whipped topping you can do it now – just add a few drops of food coloring to the container and mix well.

To construct:

Put a layer of brownies, a layer of pudding, a layer of peanut butter cups and a layer of whipped topping.

Repeat and enjoy your Peanut Butter Brownie Trifle!

Notes

You can put some hard sugar shelled chocolate Easter eggs in a blender or food processor and chop to use as a topping.

You may know these as Russian Tea Cakes, Mexican Wedding Cakes, or just plain tea cakes. They are usually made at Christmas, but they are so yummy I decided to change the recipe just a little to make them in the Spring too! The addition is Freeze Dried Fruit mixed in with the powdered sugar at the end. I used mango, strawberries and blueberries.

It’s really easy! Just put 1/2 cup of powdered sugar in a mini-food processor and add some of the freeze dried fruit. Put it on grind at least mine has two settings Chop and Grind and keep adding the fruit until you get the color you want. I started with the mango, then the strawberries and finally the blueberries so I didn’t have to wash it between the three!

I had to use the whole 1 ounce bag of mangos, half of the 2 ounce bag of blueberries, and maybe a third of the bag of strawberries. The strawberries were particularly vibrant this time and I wanted pink not red.

I think Spring Time Tea Cakes could become Autumn Tea Cakes using mango, cocoa powder, and something orange – maybe peaches.

The fruit gives just a little hint of flavor to the powdered sugar. The cookies are a rich shortbread with chopped pecans. So good!

A rich shortbread cookie with chopped pecans and powdered sugar tinted with freeze dried fruit.

Ingredients

For the cookies:

1 Cup Butter – softened

1/2 Cup Powdered Sugar

1 teaspoon Vanilla

2 1/4 Cups Flour

1/4 teaspoon salt

3/4 Cup of Pecans  – finely chopped

For the colored powdered sugar:

1 1/2 Cups Powdered Sugar

3 small bags of Freeze Dried Fruit

Instructions

For the cookies:

Preheat oven to 400.

Cream together the butter, powdered sugar and vanilla.

Mix together the salt, pecans and flour.

Slowly add the flour mixture to the butter mixture until well combined.

The dough may look crumbly but it isn’t with all that butter.

Place parchment paper on cookie sheet.

Make the dough into 1 inch balls.

Place about an inch apart, these cookies don’t spread so you don’t have to worry about having one giant cookie!

Bake at 400 for 10-12 minutes.

As soon as you take them from the oven, roll them in the powdered sugar, I use a spoon to cover them and then sort of pat it around them.  This makes 2 dozen so there can be eight of each color.

Place on cooling rack.

For the colored powdered sugar:

Place 1/2 cup powdered sugar in a mini food processor.  Add the freeze dried fruit until you get the color of your choice.  Pour into a bowl for dredging and make your next color.

Strawberry Cream Cheese Pie

 

Strawberry Cream Cheese Pie is one of my Aunt Frieda’s recipes! Aunt Frieda is one of the six sisters, my grandmother’s sisters. This pie is really delicious with the great flavor of whole strawberries and a fluffy no bake cream cheese base! So so Yummy!

This is my Aunt Frieda! She was the perfect Aunt! When she babysat we had Spaghetti and Mashed Potatoes for dinner, with a quick walk to Dairy Queen for dipped cones! My sister and I loved spending the night with her, we would play cards and board games and before bed sometimes we would get a piece of her Strawberry Cream Cheese Pie! I miss her a lot!

As you know I hate making pie crust, so I buy the rolls in the refrigerator section. Sometimes I get a ready made graham cracker crust, depending on my mood. If you want to make scratch crusts, there are tons of recipes on the Internet! Good luck! I hope they work out better for you than they do for me!

Strawberry Cream Cheese Pie

This pie is so delicious with a fluffy rich cream cheese base and topped with Strawberries!  

The secret to the topping is Strawberry Jello!

Ingredients

For the Cream Cheese Base:

8 ounces (1 box) Cream Cheese – softened

1/2 Cup Powdered Sugar

1/2 Teaspoon Vanilla Extract

1 Cup Heavy Cream

 

For the Strawberry Topping:

2 Tablespoons Cornstarch

1/4 Cup Sugar

2 Tablespoons Strawberry Jello – This is most of a box

1/2 Cup Water

1 Tablespoon Lemon Juice

3 Cups of Strawberries – stemmed and hulled

Instructions

For the Cream Cheese Base:

Make crust of choice, if traditional pie crust or homemade graham cracker crust let cool completely.

Beat together cream cheese, powdered sugar and vanilla until smooth and almost fluffy.

In a separate bowl, whip the cream until it forms stiff peaks.

Gently fold the whipped cream into the cream cheese mixture.

Evenly spread the cream cheese mixture into your cooled crust.

Refrigerate for 1-2 hours.

For the Strawberry Topping:

In a saucepan, stir together cornstarch, sugar, strawberry jello, lemon juice and water.  

Whisk or stir constantly over low heat until it thickens.

Remove from Heat and let cool 20  –  30 minutes.

Mix in whole or sliced strawberries until they are all coated and shiny.

Arrange strawberries as desired or just pile them on top of the cream cheese layer.

Refrigerate until ready to serve and refrigerate any left overs.
