Grandma Lillian’s Apple Bundt Cake


This is my grandmother’s Apple Bundt Cake. Both the Cake and the Glaze are made from fresh tart apples with plenty of cinnamon and a dash of nutmeg! It is so Yummy and a great welcome to the Fall Season! I could eat this year round! Enjoy!
Ingredients:
Cake
2 Cups Sugar
1 Cup Butter, Softened
2 Whole Eggs, beaten
1 teaspoon Vanilla
3 Cups Apple, Diced
3 Cups Flour, sifted
1 teaspoon Baking soda
1 teaspoon Salt
1 1/2 teaspoons Cinnamon
1/2 teaspoon Nutmeg
3/4 Cup Pecans, Chopped
Glaze
1/2 Cup Apples, Shredded
1 Cup Apple Juice
1 tablespoon Cinnamon
1 Cup Powdered sugar
Instructions:
Preheat oven to 350.
Cream together sugar, butter, add eggs and vanilla, mix until smooth.
Stir in apples and add dry ingredients and nuts. Mix well. The Mixture will be thick.
Pour batter into a Bundt pan or a 9×13 pan which has been lightly greased and floured.
Bake at 350 for one hour.
For the glaze
In a small sauce pan stir together shredded apples, apple juice and cinnamon.
Bring to a boil then reduce an simmer for 30 – 40 minutes.
Remove from heat and stir in powdered sugar.
Let cake cool at least an hour before attempting to remove from pan.
When cooled remove from pan and pour glaze over cake.
